We stumbled upon “Red Wattle Pork Chops” at our local farmers market a few years ago. OH MY HEAVENS! Never ever will I ever buy another pork chop from the grocery store. Or for that matter – any cut of pork! Little did I know that the pride of the Red Wattle Hog isn’t his pork chop, however… but his bacons! While most pigs grow fat, this heritage breed grows long; giving him two, huge, beautiful slabs of bacon!

My brilliant husband was so excited when we started this adventure that he even built a smoker in our backyard.

We’ve previously kept one Sal and an unrelated Boar for breeding. But fingers crossed – we hope to expand our little hog operation this year. More pigs, means more bacon, and more bacon makes for a very happy bunch of Coleman’s!
